Evocations

Cocoa is native to Central America. The Aztecs are the first ones found with cocoa pods, learning their unique properties and introducing them to the world. It is said that Hernán Cortés, during his trip to Mexico City, discovered the importance of cocoa beans.

Cocoa comes from a perennial tree, which produces oblong fruits. Once mature they take a reddish tone and can contain up to 40 cocoa grains each.

The Xocoati, extracted from the cocoa beans, a melted bitter mixture with a ground chilli and cardamom, creates a perfect elixir for the palate that was called "delicacy of the gods". It was said that this Aztec drink gave the gods the strength of power and knowledge. For this reason Montezuma, the last of the Aztec kings, was so sweet that it drank up to 50 cups a day.
